Air Fryer Mini Quiche

Ingredients:

  • 4 large eggs
  • 1/2 cup milk or heavy cream
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup diced cooked ham, bacon, or sausage (optional)
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup chopped fresh spinach (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Cooking spray
  • Fresh herbs for garnish (optional)

Instructions:

  1. Prepare the Egg Mixture:
    • In a medium bowl, whisk together the eggs, milk or heavy cream, shredded cheese, salt, black pepper, and garlic powder until well combined.
  2. Add the Fillings:
    • Stir in the diced cooked ham, bacon, or sausage (if using), along with the finely chopped onion, bell pepper, and fresh spinach (if using).
  3. Preheat the Air Fryer:
    • Preheat your air fryer to 350°F (175°C) for about 5 minutes.
  4. Prepare the Muffin Cups:
    • Lightly spray silicone muffin cups or ramekins with cooking spray to prevent sticking.
    • Divide the egg mixture evenly among the muffin cups, filling them about 3/4 full.
  5. Cook the Mini Quiches:
    • Place the filled muffin cups in the air fryer basket. Depending on the size of your air fryer, you may need to cook in batches.
    • Air fry at 350°F (175°C) for 12-15 minutes, or until the quiches are set and a toothpick inserted into the center comes out clean. The tops should be lightly golden.
  6. Serve:
    • Carefully remove the mini quiches from the air fryer and let them cool slightly before removing them from the muffin cups.
    • Garnish with fresh herbs, if desired, and serve warm.
