Asparagus Stuffed Chicken Breast

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 12 asparagus spears, trimmed
  • 4 slices provolone cheese (or mozzarella)
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • 1/2 lemon, juiced
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare Chicken Breasts:
    • Preheat oven to 375°F (190°C).
    • Butterfly each chicken breast by cutting lengthwise through the center, being careful not to cut all the way through. Open the chicken breasts like a book.
    • Season both sides with salt, pepper, garlic powder, and paprika.
  2. Stuff the Chicken:
    • Place 3 asparagus spears and 1 slice of provolone cheese inside each chicken breast. Fold the chicken over to enclose the filling and secure with toothpicks.
  3. Sear the Chicken:
    • In a large oven-safe skillet, heat olive oil over medium-high heat.
    • Add the stuffed chicken breasts and sear for 3-4 minutes on each side, until golden brown.
  4. Bake the Chicken:
    • Pour chicken broth into the skillet and squeeze lemon juice over the top.
    • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  5. Serve:
    • Remove the toothpicks before serving.
    • Garnish with fresh parsley.
    • Serve hot, optionally with a side of rice, potatoes, or a fresh salad.
