Baked Sweet and Sour Chicken

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 bell pepper, diced (any color you prefer)
  • 1 onion, diced
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 1/2 cup ketchup
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Cooked rice, for serving


  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Sauce: In a small bowl, whisk together ketchup, soy sauce, rice vinegar, brown sugar, and cornstarch until smooth. Set aside.
  3. Cook Chicken: Heat vegetable oil in a large skillet over medium-high heat. Season chicken pieces with salt and pepper, then add to the skillet. Cook until chicken is browned on all sides, about 5-6 minutes. Remove chicken from skillet and set aside.
  4. Prepare Vegetables: In the same skillet, add onion, bell pepper, broccoli, and garlic. Cook until vegetables are tender-crisp, about 4-5 minutes.
  5. Combine Everything: Return chicken to the skillet. Add pineapple chunks and pour the prepared sauce over everything. Stir well to combine.
  6. Bake: Transfer everything from the skillet to a baking dish. Bake in the preheated oven for 20 minutes, or until the sauce is bubbly and chicken is cooked through.
  7. Serve: Serve hot over cooked rice.
