Ingredients

  • 2 cups broccoli florets, finely chopped (fresh or frozen, thawed)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (regular or panko)
  • 2 large eggs, beaten
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Prepare Broccoli:
    • If using fresh broccoli, blanch the florets in boiling water for 2-3 minutes, then transfer to an ice bath to stop the cooking process. Drain and chop finely.
    • If using frozen broccoli, ensure it is fully thawed and drained, then chop finely.
  2. Mix Ingredients:
    • In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, beaten eggs, minced garlic, onion powder, salt, and black pepper. Mix until well combined.
  3. Form Patties:
    • Take a handful of the mixture and form it into a patty about 2-3 inches in diameter. Repeat with the remaining mixture.
  4. Cook Patties:
    • Heat the olive oil in a large skillet over medium heat.
    • Add the patties to the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Serve:
    • Serve the broccoli cheese patties hot, as a side dish or a snack. They pair well with a dipping sauce like ranch, marinara, or a garlic aioli.
