Christmas Breakfast Casserole

  • 1 lb (450g) breakfast sausage (pork or turkey)
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cups frozen hash browns (thawed)
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 8 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Fresh parsley, chopped (for garnish)


  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook Sausage:
    • In a large skillet over medium heat, cook the breakfast sausage, breaking it into small pieces, until browned and cooked through. Remove sausage from the skillet and set aside.
  3. Sauté Vegetables:
    • In the same skillet, add the chopped onion, red bell pepper, and green bell pepper. Cook until the vegetables are softened, about 5 minutes.
  4. Assemble Casserole:
    • Spread the thawed hash browns evenly in the bottom of the greased baking dish.
    • Layer the cooked sausage over the hash browns.
    • Sprinkle the sautéed vegetables over the sausage.
    • Top with shredded cheddar and mozzarella cheeses.
  5. Prepare Egg Mixture:
    • In a large bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, onion powder, and paprika until well combined.
  6. Combine and Bake:
    • Pour the egg mixture evenly over the layers in the baking dish.
    • Gently press down with a spatula to ensure everything is evenly coated with the egg mixture.
    • Bake in the preheated oven for 40-45 minutes, or until the eggs are set and the top is golden brown.
  7. Garnish and Serve:
    • Remove the casserole from the oven and let it cool for a few minutes.
    • Garnish with fresh parsley before serving.
