Griddle Rueben’s

  • 8 slices rye bread
  • 8 slices Swiss cheese
  • 1 pound corned beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 1/2 cup Thousand Island dressing
  • 4 tablespoons unsalted butter, softened


  1. Preheat Griddle:
    • Preheat your griddle or large skillet over medium heat.
  2. Assemble Sandwiches:
    • Lay out 8 slices of rye bread.
    • Spread Thousand Island dressing evenly on one side of each bread slice.
    • On 4 slices, layer a slice of Swiss cheese, followed by an even portion of corned beef, then sauerkraut, and another slice of Swiss cheese.
    • Top each sandwich with the remaining 4 slices of bread, dressing side down.
  3. Butter the Bread:
    • Spread softened butter on the outside of each sandwich, covering both the top and bottom slices of bread.
  4. Griddle the Sandwiches:
    • Place the sandwiches on the preheated griddle.
    • Cook until the bread is golden brown and crispy and the cheese is melted, about 3-5 minutes per side.
    • Press down gently with a spatula to ensure even cooking.
  5. Serve:
    • Remove the sandwiches from the griddle and let them cool slightly.
    • Cut each sandwich in half, if desired, and serve hot.
