Ingredients

  • 2 lbs (900g) pork belly, skin on
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon smoked paprika (optional)
  • 1/4 cup water

Instructions

  1. Prepare the Pork Belly:
    • Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
    • In a bowl, mix together the garlic, ginger, soy sauce, honey or brown sugar, rice vinegar, sesame oil, black pepper, salt, smoked paprika (if using), and water to create the marinade.
  2. Marinate the Pork Belly:
    • Place the pork belly in a large resealable plastic bag or a shallow dish.
    • Pour the marinade over the pork belly, ensuring it is well-coated.
    • Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for more flavor.
  3. Grill the Pork Belly:
    • Preheat the grill to medium heat (about 350°F/175°C).
    • Remove the pork belly from the marinade and pat it dry with paper towels. Reserve the marinade.
    • Place the pork belly on the grill, skin side up. Grill for about 30 minutes, then flip and grill for another 30 minutes, basting occasionally with the reserved marinade.
    • Cook until the pork belly is crispy and the internal temperature reaches 165°F (74°C).
  4. Rest and Serve:
    • Remove the pork belly from the grill and let it rest for about 10 minutes.
    • Slice the pork belly into thin pieces and serve.
