Ingredients

Instructions
- Prepare the Pork Belly:
- Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
- In a bowl, mix together the garlic, ginger, soy sauce, honey or brown sugar, rice vinegar, sesame oil, black pepper, salt, smoked paprika (if using), and water to create the marinade.
- Marinate the Pork Belly:
- Place the pork belly in a large resealable plastic bag or a shallow dish.
- Pour the marinade over the pork belly, ensuring it is well-coated.
- Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for more flavor.
- Grill the Pork Belly:
- Preheat the grill to medium heat (about 350°F/175°C).
- Remove the pork belly from the marinade and pat it dry with paper towels. Reserve the marinade.
- Place the pork belly on the grill, skin side up. Grill for about 30 minutes, then flip and grill for another 30 minutes, basting occasionally with the reserved marinade.
- Cook until the pork belly is crispy and the internal temperature reaches 165°F (74°C).
- Rest and Serve:
- Remove the pork belly from the grill and let it rest for about 10 minutes.
- Slice the pork belly into thin pieces and serve.
