  • Peels from 4-6 large potatoes, washed and patted dry
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional)
  • Fresh herbs (such as rosemary or thyme) or grated Parmesan cheese for garnish (optional)


  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Season the Peels:
    • In a large bowl, toss the potato peels with olive oil until they are well coated.
    • Sprinkle with salt, black pepper, garlic powder, and paprika (if using). Toss again to ensure even coating.
  3. Arrange on Baking Sheet:
    • Spread the seasoned potato peels in a single layer on the prepared baking sheet. Avoid overcrowding to ensure they get crispy.
  4. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the peels are golden brown and crispy. Check and stir the peels halfway through the cooking time to ensure even baking.
  5. Garnish and Serve:
    • Remove from the oven and, if desired, sprinkle with fresh herbs or grated Parmesan cheese while still hot.
    • Let cool slightly before serving.
