MATHEREES PORK CHOPS

Ingredients:

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper

Instructions:

  1. Prepare the Marinade:
    • In a bowl, whisk together olive oil, soy sauce, Worcestershire sauce, brown sugar, lemon juice, garlic, thyme, rosemary, and black pepper.
  2. Marinate the Pork Chops:
    • Place pork chops in a large resealable plastic bag or a shallow dish.
    • Pour the marinade over the pork chops, making sure they are well coated.
    • Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for best flavor.
  3. Preheat and Cook:
    • Preheat grill to medium-high heat or preheat a skillet over medium-high heat.
    • Remove pork chops from the marinade and let excess marinade drip off. Discard the marinade.
    • If using a grill: Grill pork chops for about 4-5 minutes per side, or until they reach an internal temperature of 145°F (63°C).
    • If using a skillet: Heat a little olive oil in the skillet and cook pork chops for about 4-5 minutes per side, or until they reach an internal temperature of 145°F (63°C).
  4. Rest and Serve:
    • Let pork chops rest for 5 minutes before serving to allow juices to redistribute.
    • Serve with your choice of sides, such as mashed potatoes, grilled vegetables, or a fresh salad.
