MILK BRIOCHE ROLLS

Ingredients:

  • 3 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1 teaspoon salt
  • 1/2 cup warm milk (about 110°F/43°C)
  • 1/4 cup warm water (about 110°F/43°C)
  • 3 large eggs, at room temperature
  • 1/2 cup unsalted butter, softened and cut into small pieces
  • 1 egg (for egg wash)
  • 1 tablespoon water (for egg wash)
  • Sesame seeds or poppy seeds (optional, for topping)

Instructions:

  1. Activate the Yeast:
    • In a small bowl, combine warm water, warm milk, and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes, until frothy.
  2. Mix Dry Ingredients:
    • In a large mixing bowl, whisk together the flour and salt.
  3. Combine Ingredients:
    • Make a well in the center of the flour mixture. Add the yeast mixture and eggs. Mix until a dough forms.
  4. Add Butter:
    • Gradually add the softened butter, a few pieces at a time, mixing well after each addition. Knead the dough until it becomes smooth and elastic, about 10 minutes by hand or 5-7 minutes using a stand mixer with a dough hook.
  5. First Rise:
    • Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 1/2 to 2 hours, or until doubled in size.
  6. Shape Rolls:
    • Punch down the dough to release the air. Divide the dough into 12 equal pieces. Shape each piece into a smooth ball and place them on a parchment-lined baking sheet.
  7. Second Rise:
    • Cover the rolls with a damp cloth and let them rise for another 30 minutes, or until puffy.
  8. Prepare Egg Wash:
    • Preheat your oven to 375°F (190°C).
    • In a small bowl, whisk together the egg and 1 tablespoon of water to make the egg wash. Brush the tops of the rolls with the egg wash. Sprinkle with sesame seeds or poppy seeds if desired.
  9. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.
  10. Cool:
  • Let the rolls cool on a wire rack before serving.
