Nacho Cheese Beef Wrap

Ingredients

Beef Filling:

  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix (or homemade seasoning)
  • 1/4 cup (60ml) water

Nacho Cheese Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup (240ml) milk
  • 1 1/2 cups (170g) shredded cheddar cheese
  • 1/4 cup (60g) nacho cheese dip (optional, for extra flavor)
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste

Wrap Assembly:

  • 4 large flour tortillas
  • 1 cup (100g) shredded lettuce
  • 1 cup (150g) diced tomatoes
  • 1/2 cup (60g) sliced jalapeños (optional)
  • 1/2 cup (60g) sliced black olives (optional)
  • 1/2 cup (60g) sour cream (optional)

Instructions

  1. Prepare Beef Filling:
    • In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is translucent. Drain excess fat.
    • Add the taco seasoning mix and water to the skillet. Stir to combine and cook for 5-7 minutes, or until the sauce thickens. Set aside.
  2. Prepare Nacho Cheese Sauce:
    • In a medium saucepan, melt the butter over medium heat.
    • Whisk in the flour and cook for 1-2 minutes, until the mixture is bubbling and slightly golden.
    • Gradually whisk in the milk, continuing to whisk until the mixture is smooth and thickened.
    • Remove from heat and stir in the shredded cheddar cheese and nacho cheese dip, if using, until melted and smooth.
    • Add paprika, and season with salt and black pepper to taste.
  3. Assemble Wraps:
    • Warm the flour tortillas in the microwave or on a skillet.
    • Spread a generous amount of nacho cheese sauce in the center of each tortilla.
    • Top with the seasoned beef mixture, shredded lettuce, diced tomatoes, sliced jalapeños, and black olives, if using.
    • Add a dollop of sour cream on top, if desired.
  4. Wrap:
    • Fold in the sides of the tortilla and then roll it up from the bottom to the top, securing all the fillings inside.
  5. Serve:
    • Serve immediately, or warm the wraps in a skillet for a few minutes to make them crispy.
