Ingredients

Pork Chops:

  • 4 bone-in pork chops (1-inch thick)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

Scalloped Potatoes:

  • 4 large russet potatoes, thinly sliced
  • 1 medium onion, thinly sliced
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups (480ml) milk
  • 1 cup (100g) shredded cheddar cheese
  • 1/2 cup (50g) grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 teaspoon dried thyme

Instructions

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Pork Chops:
    • Season the pork chops with salt, black pepper, garlic powder, onion powder, and paprika on both sides.
    • In a large skillet, heat the olive oil over medium-high heat.
    • Sear the pork chops on both sides until they are golden brown, about 3-4 minutes per side. Remove the pork chops from the skillet and set aside.
  3. Prepare Scalloped Potatoes:
    • In a medium saucepan, melt the butter over medium heat.
    • Add the flour and whisk continuously for about 1-2 minutes to make a roux.
    • Gradually add the milk, whisking constantly until the mixture thickens and begins to bubble.
    • Remove from heat and stir in the cheddar cheese, Parmesan cheese, salt, black pepper, and dried thyme until the cheese is melted and the sauce is smooth.
  4. Assemble Dish:
    • In a greased 9×13-inch baking dish, arrange half of the sliced potatoes in an even layer.
    • Top with half of the sliced onions.
    • Pour half of the cheese sauce over the potatoes and onions.
    • Repeat with the remaining potatoes, onions, and cheese sauce.
  5. Add Pork Chops:
    • Place the seared pork chops on top of the scalloped potatoes in the baking dish.
  6. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
    • Remove the foil and bake for an additional 20-30 minutes, or until the potatoes are tender and the pork chops are cooked through.
  7. Serve:
    • Let the dish rest for a few minutes before serving.
