Ingredients
Pork Chops:
- 4 bone-in pork chops (1-inch thick)
- 2 tablespoons olive oil

Scalloped Potatoes:
- 4 large russet potatoes, thinly sliced

Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare Pork Chops:
- Season the pork chops with salt, black pepper, garlic powder, onion powder, and paprika on both sides.
- In a large skillet, heat the olive oil over medium-high heat.
- Sear the pork chops on both sides until they are golden brown, about 3-4 minutes per side. Remove the pork chops from the skillet and set aside.
- Prepare Scalloped Potatoes:
- In a medium saucepan, melt the butter over medium heat.
- Add the flour and whisk continuously for about 1-2 minutes to make a roux.
- Gradually add the milk, whisking constantly until the mixture thickens and begins to bubble.
- Remove from heat and stir in the cheddar cheese, Parmesan cheese, salt, black pepper, and dried thyme until the cheese is melted and the sauce is smooth.
- Assemble Dish:
- In a greased 9×13-inch baking dish, arrange half of the sliced potatoes in an even layer.
- Top with half of the sliced onions.
- Pour half of the cheese sauce over the potatoes and onions.
- Repeat with the remaining potatoes, onions, and cheese sauce.
- Add Pork Chops:
- Place the seared pork chops on top of the scalloped potatoes in the baking dish.
- Bake:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 20-30 minutes, or until the potatoes are tender and the pork chops are cooked through.
