Savory Hand Pies

Ingredients:

For the Pastry:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cut into cubes
  • 1/2 cup ice water

For the Filling:

  • 1 tablespoon olive oil
  • 1/2 cup onion, finely chopped
  • 1 garlic clove, minced
  • 1 cup cooked and diced chicken, ham, or ground beef
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chicken or beef broth
  • 1 tablespoon all-purpose flour
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

For Assembly:

  • 1 large egg, beaten (for egg wash)

Instructions:

  1. Prepare the Pastry:
    • In a large bowl, combine the flour and salt.
    • Add the cold, cubed butter and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add the ice water, mixing just until the dough comes together. Do not overmix.
    • Divide the dough into two discs, wrap each in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
    • Add the cooked and diced meat of your choice, peas, and carrots. Cook for another 3-4 minutes.
    • Sprinkle the flour over the mixture and stir to combine.
    • Pour in the broth and add the dried thyme. Cook, stirring frequently, until the mixture thickens.
    • Remove from heat and stir in the shredded cheddar cheese. Season with salt and black pepper to taste. Allow the filling to cool slightly.
  3. Assemble the Hand Pies:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • On a lightly floured surface, roll out one of the dough discs to about 1/8-inch thickness.
    • Using a round cutter or a bowl, cut out circles from the dough (about 4-5 inches in diameter). Re-roll the scraps as needed.
    • Place a spoonful of the filling in the center of each circle.
    • Brush the edges of the dough circles with the beaten egg.
    • Fold the dough over the filling to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges.
    • Place the hand pies on the prepared baking sheet and brush the tops with the remaining beaten egg.
  4. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the hand pies are golden brown and crispy.
  5. Serve:
    • Allow the hand pies to cool slightly before serving. Enjoy them warm or at room temperature.
