Skillet Chicken and Mushroom Wine Sauce

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced (cremini or white button mushrooms work well)
  • 1/2 cup dry white wine (such as Sauvignon Blanc or Chardonnay)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • Fresh parsley, chopped (for garnish)


  1. Prepare Chicken:
    • Season chicken breasts with salt and pepper on both sides.
  2. Cook Chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side. Remove chicken from skillet and set aside.
  3. Sauté Vegetables:
    • In the same skillet, add onion and cook until softened, about 3-4 minutes.
    • Add garlic and mushrooms and cook until mushrooms are browned, about 5 minutes.
  4. Deglaze Pan:
    • Pour in white wine and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
  5. Add Broth and Cream:
    • Stir in chicken broth, heavy cream, Dijon mustard, and dried thyme. Bring to a simmer and cook until sauce thickens slightly, about 5 minutes.
  6. Combine Chicken and Sauce:
    • Return chicken breasts to the skillet, spooning some sauce over the top.
    • Simmer for another 2-3 minutes until chicken is heated through and flavors are well combined.
  7. Serve:
    • Garnish with fresh parsley.
    • Serve the chicken and mushroom wine sauce over rice, mashed potatoes, or pasta.
