  • 2 lbs collard greens, washed, stemmed, and chopped
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 smoked ham hock or 4 slices bacon, chopped
  • 4 cups chicken broth
  • 1 cup water
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper to taste


  1. Prepare the Collard Greens:
    • Thoroughly wash the collard greens to remove any grit.
    • Remove the tough stems and chop the leaves into bite-sized pieces.
  2. Combine Ingredients in Slow Cooker:
    • In the bottom of the slow cooker, place the chopped onion, minced garlic, and smoked ham hock or chopped bacon.
    • Add the collard greens, packing them in as they will cook down significantly.
    • Pour in the chicken broth, water, apple cider vinegar, and sprinkle with sugar, red pepper flakes (if using), salt, and pepper.
  3. Cook:
    • Cover the slow cooker and cook on low for 6 hours or on high for 4 hours, until the collard greens are tender and the flavors are well blended.
  4. Finish and Serve:
    • Once cooked, remove the ham hock. If using, pull off any meat, chop it, and stir it back into the greens.
    • Taste and adjust the seasoning with more salt, pepper, or vinegar as needed.
    • Serve hot as a side dish.
