Southern Collard Greens Recipe

Ingredients
2 lbs collard greens, washed, stemmed, and chopped
1 large smoked ham hock or 4 slices of bacon, chopped
1 large onion, chopped
3 cloves garlic, minced
6 cups (1.4 liters) chicken broth
1 tablespoon apple cider vinegar
1 teaspoon sugar
1/2 teaspoon crushed red pepper flakes (optional)
Salt and black pepper to taste
Instructions
Prepare Collard Greens:

Wash the collard greens thoroughly. Remove the thick stems and chop the leaves into bite-sized pieces.
Cook Meat:

In a large pot, cook the ham hock or bacon over medium heat until browned and the fat is rendered. If using bacon, remove and set aside after cooking.
Sauté Aromatics:

Add the chopped onion to the pot and sauté in the rendered fat until translucent, about 5 minutes.
Add the minced garlic and cook for another 1-2 minutes, until fragrant.
Add Collard Greens:

Add the chopped collard greens to the pot, stirring to coat them in the fat and aromatics.
Simmer:

Pour in the chicken broth, apple cider vinegar, and sugar.
If using ham hock, leave it in the pot. If using bacon, add it back to the pot now.
Add the crushed red pepper flakes if using.
Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 1 hour, stirring occasionally, until the collard greens are tender.
Season:

Remove the ham hock, if using, and pick off any meat, returning it to the pot. Discard the bone.
Season the collard greens with salt and black pepper to taste.
Serve:

Serve hot as a side dish.
