Strawberry & Banana Magnum

Ingredients

Ice Cream Base:

  • 2 cups (480ml) heavy cream
  • 1 cup (240ml) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup (150g) fresh strawberries, hulled and diced
  • 1 large ripe banana, mashed

Chocolate Coating:

  • 2 cups (340g) semisweet or milk chocolate, chopped
  • 2 tablespoons coconut oil

Extras:

  • 8-10 ice cream sticks
  • Chopped nuts, sprinkles, or coconut flakes (optional, for decoration)

Instructions

  1. Prepare Ice Cream Base:
    • In a large mixing bowl, whip the heavy cream until stiff peaks form.
    • Gently fold in the sweetened condensed milk and vanilla extract until well combined.
    • Divide the mixture into two separate bowls.
    • In one bowl, fold in the diced strawberries.
    • In the other bowl, fold in the mashed banana.
  2. Assemble Magnum Bars:
    • Spoon a layer of the strawberry mixture into ice cream molds, filling each mold halfway.
    • Spoon a layer of the banana mixture on top of the strawberry layer, filling the molds the rest of the way.
    • Insert an ice cream stick into each mold.
    • Smooth the tops of the molds with a spatula.
    • Freeze for at least 3 hours, or until completely solid.
  3. Prepare Chocolate Coating:
    • In a microwave-safe bowl, combine the chopped chocolate and coconut oil.
    • Microwave in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth.
  4. Dip Ice Cream Bars:
    • Remove the ice cream bars from the molds.
    • Quickly dip each bar into the melted chocolate, letting the excess drip off.
    • If desired, immediately sprinkle with chopped nuts, sprinkles, or coconut flakes before the chocolate hardens.
    • Place the dipped bars on a baking sheet lined with parchment paper and freeze for an additional 30 minutes to set the chocolate.
  5. Serve:
    • Enjoy your homemade Strawberry & Banana Magnum bars straight from the freezer.
