For the Cabbage Rolls:

  • 1 large head of green cabbage
  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme (optional)

For the Tomato Sauce:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika (optional)
  • 1 cup beef broth


  1. Prepare the Cabbage:
    • Bring a large pot of water to a boil. Carefully remove the core from the cabbage.
    • Place the whole cabbage in the boiling water. As the outer leaves become pliable, carefully remove them with tongs and set aside. Continue until you have about 12 large cabbage leaves.
  2. Prepare the Filling:
    • In a large mixing bowl, combine the ground beef, ground pork, cooked rice, finely chopped onion, minced garlic, beaten egg, salt, black pepper, paprika, and dried thyme (if using). Mix until well combined.
  3. Prepare the Tomato Sauce:
    • In a medium saucepan, heat the olive oil over medium heat. Add the finely chopped onion and cook until softened, about 5 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
    • Stir in the tomato sauce, diced tomatoes, tomato paste, sugar, salt, black pepper, dried basil, dried oregano, smoked paprika (if using), and beef broth. Bring to a simmer and let it cook for about 10 minutes.
  4. Assemble the Cabbage Rolls:
    • Preheat your oven to 350°F (175°C).
    • Lay a cabbage leaf on a flat surface. Place about 1/4 cup of the meat mixture in the center of the leaf. Fold the sides of the leaf over the filling, then roll it up from the stem end to the top, encasing the filling.
    • Repeat with the remaining leaves and filling.
  5. Bake the Cabbage Rolls:
    • Spread a thin layer of the tomato sauce on the bottom of a large baking dish.
    • Place the cabbage rolls seam-side down in the baking dish, packing them snugly.
    • Pour the remaining tomato sauce over the cabbage rolls, ensuring they are well-covered.
    • Cover the dish with aluminum foil and bake in the preheated oven for 1 hour.
    • After 1 hour, remove the foil and bake for an additional 30 minutes, allowing the top to brown slightly.
  6. Serve:
    • Remove the cabbage rolls from the oven and let them cool for a few minutes before serving.
    • Garnish with chopped fresh parsley if desired.
