For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt

For the Filling:

  • 2 cups mashed sweet potatoes (about 2-3 large sweet potatoes)
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup evaporated milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt


  1. Prepare the Sweet Potatoes:
    • Preheat your oven to 375°F (190°C).
    • Wash and scrub the sweet potatoes, then pierce them several times with a fork.
    • Place the sweet potatoes on a baking sheet and bake for 45-50 minutes, or until tender. Let them cool, then peel and mash until smooth.
  2. Prepare the Crust:
    • In a medium bowl, mix together the flour and salt. Add the cold butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
    • Add the ice water, one tablespoon at a time, and mix until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
    • On a lightly floured surface, roll out the dough to fit a 9-inch pie dish. Transfer the dough to the pie dish, trim the excess, and crimp the edges.
  3. Prepare the Filling:
    • In a large mixing bowl, combine the mashed sweet potatoes, melted butter, granulated sugar, brown sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth and well combined.
  4. Assemble the Pie:
    • Preheat your oven to 350°F (175°C).
    • Pour the sweet potato filling into the prepared pie crust, spreading it out evenly.
  5. Bake:
    • Bake in the preheated oven for 50-60 minutes, or until the filling is set and a knife inserted into the center comes out clean. If the crust starts to brown too quickly, cover the edges with aluminum foil.
  6. Cool and Serve:
    • Remove the pie from the oven and let it cool completely on a wire rack before serving. This allows the filling to set properly.
    • Serve the sweet potato pie with whipped cream or a scoop of vanilla ice cream.
